Shaman Pecorino is the result of a project carried out in collaboration with Prof. Alberto Palliotti of the University of Viticulture in Perugia. The grafting material comes from a hundred-year-old Pecorino vine that stands at an altitude of about 900 metres above sea level in the Umbrian Apennines, still supported by an old sycamore maple, as it was custom in the past. This vine material was then transferred to the soil of an old vineyard on the Rosarubra estate, and just one year later the first grapes were harvested, fermented and matured in new oak barrels. The result was a fascinating white wine with a unique expression of Pecorino.
Visually, the wine has an intense amber colour, typical of the autochthonous grape variety. Shaman reveals all the vivid nuances of nature warmed by the sun and the history that accompanies this ancient grape variety. On the nose, it surprises with intense scents ranging from green to white floral notes. The balance of aromas, the complex structure and the marked acidity ensure a persistent and inimitable taste and allow for a very long ageing. The thinning techniques, the manual harvesting of the grapes, the fermentation and the long ageing in oak barrels complete the essence of this wine. Due to its limited production, it is worth keeping a few bottles in your private cellar.
