Made by hand in Miglianico, Abruzzo, the pasta starts with 100% regional durum wheat semolina and spring water from the Majella mountains. The dough is bronze-extruded to create a rough surface, and then slow-dried at low temperatures to develop depth of flavor and perfect bite.
